Frozen foods continue to make up an increasing proportion of our dietary intake in Europe. Technical innovation is increasingly producing new high-quality frozen foods with a good safety record. This document is one of a series of guides produced by members of European Union FAIR programme concerted action CT96-1180. The series aims to provide the emplyees in the frozen food and retail industry with up to date information on best practice in the handling of frozen foods. The authors come from a wide range of academics and industrialists working in the frozen food sector. The guides are intended as an easy to read introduction to best practice. A more in-depth guide to "Managing Frozen Food" will be published by Woodhead publishing in the autumn of 1999.(ISBN:1-85573-412-5).
